I think you misunderstand. All of this Raza/Aztlan B.S. revolves around their notion of being in charge. There's nothing "Aztlan chic" about being a dark skinned Mexican guy scooping beans and rice while handing it across the counter to customers named Lance and Biff. I can't speak for Minnesota, but I've never been in a Chipotle that wasn't largely patronized by us melanin deprived types.
Being in a position of subservience is not Aztlan chic.
